Ancoats partnered with Jester Concepts and Shea, Inc. to bring Rustica’s next chapter to life in downtown Wayzata. As the first new Rustica location under the Jester umbrella, the project transforms a former bakery space into a refined, modern café experience that honors the brand’s legacy while introducing new energy to Lake Street.
The renovation included all-new equipment, finishes, and a reimagined layout designed for both functionality and comfort. Working within an existing structure came with challenges from bringing the space up to current code to integrating new mechanical systems, but also offered the opportunity to blend character with fresh design, resulting in a warm and inviting space that feels familiar yet elevated for the next generation of Rustica guests.
